April Fool Your Friends Mac & Cheese Recipe!

APRIL FOOL'S!

The origin of April Fool's Day was actually kinda surprising to me! I had no idea it dated all the way back to the 1500's when the Julian calendar, established by Julius Caesar, was replaced by the Gregorian calendar. Before the calendar was replaced by Pope Gregory the XIII the new year began on April 1st-- and when the calendar changed over in 1582 to the Gregorian calendar is when January 1st became our New Year's Day. Because we didn't have email or mobile phones or literally anyway to spread news quickly the folks around the world that didn't get the memo continued to celebrate new years on April 1st and they were known as April Fool's! Crazy!!

This week I've got a beefy mac and cheese recipe that you can use to fool your skeptical non-vegan friends and family! 

Beefy Herby Mac & Cheese 

3 Tbsp vegan butter

2 Tbsp all-purpose flour 

1/2 tsp salt

1/2 tsp garlic powder

1 cup unsweetened non-dairy milk (make sure there are no additives and 0g sugar)

1/2 cup vegan cream cheese 

5 oz HB herbed cheddar, shredded

8 oz shredded beef

10 oz cooked macaroni noodles 

Directions

  • Cook elbow macaroni according to package instructions. Be sure to add ¼ tsp salt to the water used to boil the noodles. Drain, and set aside.
  • Mix flour, sea salt, and garlic powder together in a small bowl. Set aside.
  • In a medium saucepan over medium heat, melt the butter.
  • Add flour mixture and whisk to combine.
  • Cook for 1 minute until mixture is slightly brown.
  • Add 1 cup non-dairy milk and whisk until the mixture is smooth.
  • Add cream cheese and whisk until smooth.
  • Cook on medium-high heat until the mixture is thickened (about 3-5 minutes). Be careful to not let it boil.
  • Once mixture has thickened (coats the back of the spoon), reduce heat to low and add shredded herbed cheddar. Whisk until cheese is melted and mixture is smooth. 
  • Stir in shredded beef until combined and heated through
  • Taste and add more salt/seasoning if desired.
