I know I talk a lot about the weather but living in Minnesota does that to you. Seasons are great but I'm from Guam and that soggy humidity and unrelenting heat runs in my veins so I find that I have to theme the weather changes to cope with them. Summer is adventure themed, fall is horror themed, winter is thriller themed, and spring, spring is sun shining, birds chirping and rosè and charcuterie boards outside! And I'm sucker for a damn good charcuterie board. I consider myself lucky for getting to spend everyday at a vegan butcher shop because my charcuterie options ARE ENDLESS!
This board below was one of my favorites and it was 4 feet long and fed about 25 people! For me the key to a great board is having a good mixture of meats, cheeses, veggies, dips, dried and fresh fruits, nuts, olives, and crackers and/or bread. You can make lil flowers with the vegan meats, you can slice or cube the cheeses, lay out or pile it high. I like to build these boards by starting with one hub item and building from there. In the case of this monster-sized board I started with the brie round and built around it. I placed the veggies in more of their own space here but you can mix and match until your hearts content, there's no wrong way to build a board.
All the items you see on this board are always available to order on our website with the exception of the summer sausage which is normally a holiday thing BUT we've got it available for a limited time on our website along with one of my favorite cheeses, and one of my brother's special recipes, An Evening in Marrakesh. This cheese has habanero peppers and smoked orange peel and it's so lovely with a Syrah or even a Cabernet Sauvignon.
This smaller board was for four people and although I did refill the crackers and crostini a couple of times, it was plenty of food. Here I've got chocolate and banana chips because I had some wine that paired perfectly with those.
Now I know you weren't asking for advice on food boards but here it is and I hope you at least got some fun ideas!
